The freezing process

I have cut all the drumsticks.There are few small ones. Since they are not of equal sizes, i have
kept them aside.I will put them in a box. Some people say that you have to use in 4
day.But I use drumsticks for two three weeks.The quality may come down, but the taste and
nutrition is still there.So you can use them later.

Next process is to blanch.Blanching means to boil it and to cool it.We have to put it in ice water and immediately
remove it.Then put it in a zipper cover.And freeze it.

The standard of cooking that I am using here is based on the description given by National Centre for home food preserves. The standard for how time the vegetable should be cooked.

All the hard vegetables are boiled for three minutes. I am also boiling this for three minutes. Three minutes for boiling it and three minutes for cooling it. You have to set the timer of three minutes to boil the moringas. And immediately as it is three minutes you
have to put it in the ice cold water.

In that also three minutes. Then remove it, drain it and put in a zipper cover.

Why we are boiling it is because the enzymes that break the vegetables will be stopped. The colour, the texture and the flavour will be preserved. Even if you freeze and use, the colour, the taste and texture will be preserved. So the vegetable is boiled.

After thawing

After thawing the vegetable do not put it back into the fridge. Moringas you can use on immediately removing from the fridge.You don’t need to thaw it for a long time.Because if you thaw it for a long time, the texture will be gone. And there will be more water.

Since we are following the process, the nutrients and the water inside the vegetable will be well preserved.
